The round, smooth roots offer an earthy flavor suitable for roasting, boiling, or slicing into salads, while the tall, glossy greens are tender and nutrient-rich for steaming or sautéing. It is well suited for home gardens and market production.
Early Wonder thrives in full sun and well-draining soil, with arching tops tinged maroon and greens that are tender and nutritious. It matures quickly for early spring or fall planting. Soil temperature should be 50–85°F, planting depth 1/2 inch, and germination in 5–10 days. Days to maturity are 48–55, and plants reach 2–4 inches tall. My new babay arrived safely and only lost two little leaves so far. The first one I ordered from different shop arrived with two leaves attached that fell off within ten minutes of unboxing and 22 leaves that had came off during shipping.
