El bok choy, pak choi o pok choi es un tipo de col china que se utiliza como alimento. Las variedades chinensis no forman cabezas, sino que presentan láminas verdes con la base bulbosa, formando un racimo que recuerda a las hojas de mostaza. Su sabor se asemeja al de las espinacas y las castañas de agua, pero es ligeramente más dulce, con un ligero toque picante. Las hojas verdes tienen un sabor más intenso que el bulbo blanco.
