La temperatura mínima requerida para el crecimiento de la uva es de aproximadamente 12-15 °C, la temperatura mínima del suelo es de aproximadamente 10-13 °C, la temperatura óptima para el período de floración es de aproximadamente 20 °C y la temperatura óptima para el período de expansión del fruto es de 20-30 °C. Si la diferencia de temperatura entre el día y la noche es grande, la coloración y el contenido de azúcar son mejores. Después de que las uvas brotan en primavera, un aumento repentino de la temperatura puede provocar un alargamiento de las ramas, lo que se manifiesta en una longitud de nudos insuficiente y una fertilización deficiente durante el período de floración.
