Aspecto: El hinojo de Florencia produce una base grande y bulbosa, compuesta por tallos muy compactos, que se cosecha para consumo. La base es de color blanco a verde pálido. Sobre el bulbo, crecen hojas altas, plumosas y aromáticas en tallos, parecidas al apio. Estas hojas se parecen mucho a las del eneldo o hinojo común, pero son un poco más anchas.

Sabor: El bulbo, el tallo y las hojas del hinojo de Florencia tienen un sabor dulce y suave a anís o regaliz. Este sabor es una característica distintiva de la planta.

Tamaño y crecimiento: El hinojo de Florencia suele alcanzar una altura de entre 60 y 90 cm. El bulbo puede alcanzar entre 7,5 y 10 cm de diámetro. Es un cultivo de estación fría con una temporada de crecimiento relativamente corta, por lo que suele estar listo para cosechar en 80-90 días desde su siembra.

Uso: El hinojo de Florencia es muy versátil en la cocina. El bulbo se suele cortar en rodajas y añadir a ensaladas, o bien se puede estofar, asar o cocinar a la parrilla.
