En la naturaleza, existen hasta 300 especies de agave, y su cultivo se basa en variedades americanas. Esta flor tiene hojas carnosas de color verde grisáceo o verde azulado. En algunas variedades, están decoradas con rayas amarillas o blancas. Como la mayoría de las suculentas, el tallo del agave es corto y poco desarrollado, por lo que es prácticamente invisible.
El agave crece en condiciones naturales hasta alcanzar enormes dimensiones, de 4 a 5 m de diámetro. En casa, sus variedades menos enanas pueden alcanzar hasta 3 o 4 cm. Esta especie es longeva y puede vivir entre 50 y 100 años.
En su hábitat natural, durante la floración (generalmente entre los 15 y 20 años), el agave presenta un pedúnculo de 3 a 10 m (15 000 piezas) de flores amarillentas que se agrupan en pequeños pinceles en la inflorescencia. Tras el cese de la floración, el agave produce frutos y la planta muere, dejando brotes jóvenes que brotan de los rizomas. En casa, el agave florece muy raramente.
