This White Albino beet is an heirloom from Holland that yields very sweet, pure white roots. They stay tender and flavorful even when they grow large, and they can be used for making sugar. The variety is high-yielding and stores well.
Sowing is direct: sow 4 weeks before the last frost after soaking seeds 2 hours. Plant 1 inch deep, 1 inch apart in rows 1–2 feet apart in full sun on well-drained soil; germination occurs in 5–15 days; add compost for healthy growth. Each seed may produce up to eight plants, so thin to 3 inches apart. Beets tolerate cool weather down to 25°F. Harvest about two months after sowing when roots reach 1 inch in diameter; do not let roots exceed 3 inches for best flavor and tenderness. Twist tops off about 1 inch above the root after harvest to prevent bleeding; greens up to one-third can be harvested. For best results, plant with bush beans, onions, or cabbage family; avoid pole beans.
