Lacinato Kale, also known as Dino Kale or Tuscan Kale, is an heirloom variety with elongated, dark green leaves and a bumpy, almost reptilian texture. It offers a mild, slightly sweet flavor and is versatile for raw salads, sautéing, soups, and kale chips. The plant thrives in full sun to partial shade and well-draining soil, maturing in 60-75 days. Its upright growth and compact footprint make it suitable for small gardens or raised beds, with regular harvesting delivering a continuous supply.

Originating in Tuscan regions, this kale is heavily savoyed with strap-shaped, dark leaves that are not curly. Flavor improves after a light frost, and it can be grown in heat or cold, sometimes surviving winter. Start indoors 6 weeks before the last frost or sow directly when soil is workable; mid-July plant for fall harvests. Harvest young leaves for salads; older leaves are best steamed. Kale is a great source of vitamins A, C, and K, and minerals, containing twice the amount of vitamin C as an equivalent portion of orange juice and more calcium than milk. To support healthy growth, grow in moderately fertile, well-drained soil with a pH of 5.5-6.5 and provide regular, even watering.
