Dutch Hamburg Parsley Root Seeds are an heirloom, non-GMO packet with about 2000 seeds. This Petroselinum crispum variety is known as Dutch parsley, Hamburg parsley, or rooted parsley, and it forms a substantial edible root rather than a leafy herb. Plant parsley root to obtain a large parsnip-like root plus greens that can be harvested and regrown through the summer. It is suited for Spring, Summer, and Autumn planting and tolerates USDA zones 5–10.
To grow parsley root, plant in full sun to partial shade. Prepare soil to about a foot deep, removing rocks and debris; enrich with loam, compost, or peat moss for deep roots. Keep soil rich, well-drained, and moist; dry soil may fork roots. Apply a general fertilizer monthly. Thin to 6 inches apart and weed regularly. Harvest roots when 5–6 inches long; leaves can be used like regular parsley. Roots store in the ground or a cool shed into early winter.
