Chives are a versatile and hardy perennial herb, treasured for their delicate onion flavor and ease of cultivation. The slender, hollow green leaves are perfect for garnishing soups, salads, baked potatoes, and omelets, adding a subtle oniony touch to a variety of dishes. Thriving in full sun and well-draining soil, chives are low-maintenance and a great choice for beginners and experienced gardeners alike. They grow in clumps, reaching about 12-18 inches tall, and can be planted in garden beds, borders, or containers. In early summer, chives produce round, lavender-colored blooms that are not only edible but also attract pollinators like bees and butterflies. To maintain a continuous harvest, trim leaves regularly, which encourages fresh, flavorful growth. Chives are also a great companion plant, helping to deter pests from neighboring crops. With their culinary versatility, ornamental flowers, and pest-repelling properties, chives are a staple for any herb garden.
