Arugula greens are a fast-growing, cool-season leafy crop loved for their bold, peppery flavor and tender texture. The deeply lobed, vibrant green leaves are perfect for fresh salads, sandwiches, pizza toppings, or as a spicy garnish. Thriving in full sun to partial shade and well-draining soil, arugula matures quickly, often ready for harvest in just 20-30 days. For continuous production, plant seeds in succession throughout the growing season. Arugula performs well in garden beds, containers, or even as a microgreen, making it a versatile choice for gardeners with limited space. It can also tolerate cooler temperatures, making it ideal for spring and fall planting. When left to flower, arugula produces delicate, edible white blossoms with a mild flavor that enhances dishes while attracting pollinators to the garden. With its quick growth, distinctive flavor, and adaptability, arugula is a must-have for any gardener looking to enjoy fresh, homegrown greens.
