Le bok choy, également appelé pak choi ou pok choi, est une variété de chou chinois, consommée en cuisine. Les variétés chinoises ne forment pas de pomme et leurs feuilles vertes présentent une base bulbeuse plus claire, formant une touffe rappelant la moutarde. Son goût se situe entre celui des épinards et celui des châtaignes d'eau, avec une saveur légèrement sucrée et une pointe poivrée. Les feuilles vertes sont plus savoureuses que le bulbe blanc.
