Le topinambour (Helianthus tuberosus), aussi appelé artichaut de Jérusalem, est une plante dotée d'un instinct de survie aiguisé. Hors de terre, le topinambour est majestueux, avec des allures de tournesol classique. Mais sous terre, la plante révèle de gros tubercules comestibles et nutritifs ! Imaginez un croisement entre le gingembre et la pomme de terre. Ils ne sont pas apparentés à l'artichaut, mais ont une saveur distinctement délicieuse qui rappelle l'artichaut. D'où son surnom de « Sunchoke » (tournesol + artichaut) !
Ces tubercules souterrains robustes ont intrigué les chefs naturalistes, les jardiniers amateurs et d'autres encore. Le topinambour est incroyablement polyvalent en tant que légume et peut être préparé comme n'importe quel autre légume-racine.
La culture du topinambour est optimale sans trop de soins. Une fois établis, ils poussent sans effort, rapidement, sont résistants à la sécheresse et prospèrent sous la chaleur estivale. Plantés dans le jardin, les topinambours se propagent rapidement grâce à leurs rhizomes. Avant même de vous en rendre compte, vous aurez une magnifique parcelle de topinambours qui reviendra année après année ! Les topinambours poussent également très bien en pot, où ils s'épanouiront et produiront en abondance.
Potentiellement cultivé à l'origine par les Amérindiens, le topinambour est devenu par la suite une culture populaire en Europe. De nos jours, on trouve des topinambours à l'état sauvage principalement dans l'Est des États-Unis, où ils étaient autrefois cultivés comme légumes.

My new babay arrived safely and only lost two little leaves so far. The first one I ordered from different shop arrived with two leaves attached that fell off within ten minutes of unboxing and 22 leaves that had came off during shipping.
