Aspect : Le fenouil de Florence produit une base bulbeuse et volumineuse, constituée de tiges très serrées, que l’on récolte pour la consommation. Cette base est blanche à vert pâle. Au-dessus du bulbe, de hautes feuilles aromatiques, plumeuses et plumeuses, poussent sur des pétioles, rappelant celles du céleri. Ces feuilles sont très similaires à celles de l’aneth ou du fenouil commun, mais légèrement plus larges.

Ses feuilles peuvent servir de garniture ou être ajoutées aux salades, et ses graines d’épice. C’est un ingrédient essentiel de nombreux plats italiens et méditerranéens.

Il a besoin d’une humidité constante pour éviter la montaison prématurée et pour garantir une saveur et une texture optimales.
